The BEST Chicken Salad Wrap!

Who doesn’t absolutely love a good wrap? It’s truly the perfect host for a delightful variety of ingredients, and we’ve discovered that these scrumptious handhelds are by far the easiest and most satisfying way to refuel after a long, exhilarating day spent on the trail, a cross-country road trip, or any adventure we might find ourselves enjoying. We don’t always wrap the salad either! Sometimes we use artisan lettuce leaves, or even fork it onto a good ol Triscuit, the flavor of this family favorite chicken salad is sure not to disappoint AND it’s so simple to make, especially if you use pre-cooked chicken breasts.

Ingredients

2 Chicken Breasts (Snag a pre-cooked chicken from a local store and cut up the entire fryer, or use pre-baked chicken from the deli if you’re short on time) I like using our Shake Chicken - see recipe, or simply boil chicken breasts until cooked to 165)

2-3 Stalks Celery Chopped

3 Green Onions Chopped

2-3 Cups Grapes, Halved

1/2 Cup Slivered Almonds

Dressing

1/2 Cup Mayonnaise

1/2 Cup Sour Cream (or Plain Yogurt if you prefer)

1-2 Tablespoons Brown Sugar

Juice of One Lemon

Salt/Pepper

Handful Fresh Dill or 1 Tsp Dried (Optional)

Instructions

  1. If you didn’t purchase prepared chicken, simply boil, bake, or grill a couple of chicken breasts until done at 165 degrees. For added flavor use our Shake Chicken (see recipe)

  2. Allow chicken to cool to handle, then dice into preferred size.

  3. In a large bowl, mix mayonnaise, sour cream, fresh squeezed lemon and add one Tablespoon of brown sugar. Taste and add another tablespoon if so desired (we routinely use 2 Tablespoons) Add a pinch of salt and pepper, and dill if using. Once you’re happy with the flavor…

  4. Chop celery, green onions, and grapes and add to the dressing.

  5. Toss in the chicken and slivered almonds and mix well.

  6. Allow chicken salad to chill for several hours or even overnight. Serve on literally anything - or eat it straight up!
